Making Muffin’s muffins!
Muffin is a bear who takes his cakes VERY seriously, so…
you can be sure that to find the best and perfect recipe took a lot of research and spoon-licking.
you will need:
- 125g plain flour
- 25g cocoa powder
- 1 tsp baking powder
- 1 egg
- 60g sugar
- 2 tbsp vegetable oil
- 100ml milk
- 3 drops vanilla
- 50g milk chocolate or white chocolate chunks
- 6 large or 12 small muffin cases.
Pre-heat the oven to 160c / gas mark 3.
Sieve the flour, baking powder and cocoa powder into a large mixing bowl.
In a separate jug mix together the egg, milk, sugar and vanilla.
Pour the mixture into the bowl and mix together (it will still be lumpy: that’s good!). Stir in the chocolate chunks.
Spoon the mixture into the cases and arrange on baking tray.
(tip: if using white chunks, push them into the muffins so they don’t poke out and go brown)
Cook on middle shelf for 20 minutes, or until cooked right through and cracked on the top.
Leave them to stand for 5 minutes, if you can bear (ho ho) to wait…
